Pickled Purple Eggs

This recipe may sound odd, but I promise you, my boys eat these like they’re going out of style 😉  The key sometimes to getting your kids to try new things (and healthy things!) is getting a little creative.  My youngest loves the color purple, so these were a huge hit, just based on the fact that Mommy could turn hard-boiled eggs purple!

Pickled Purple Eggs

4 to 6 hardboiled eggs

2 tsp. sea salt

1/4 cup beet kvass

filtered water to cover

 

Stuff the eggs into a quart sized Mason jar.  Dissolve the salt in the beet kvass and pour into the jar.  Add filtered water to cover, leaving about 1 inch of space from the top of the jar.

Cover with a lid and leave a room temp for one day; then transfer to the fridge and allow to marinate for a few more days before eating.
