Here’s another way to cook up liver in a way that your kids will eat it! Remember to use livers from organic pastured animals for the most nutrients and health benefits. I found the original recipe on the “Nourished and Nurtured” blog (check out her blog from more wonderful GAPS-friendly recipes!).
Liver and Butter Saute
organic pastured chicken livers (you can also use livers from other animals; chicken livers are the mildest in flavor)
homemade kefir or yogurt
organic grassfed butter
sea salt/pepper to taste
1. Soak the livers overnight in the kefir or yogurt. This helps to neutralize the flavor and improve the texture.
2. Drain the livers and blot dry. Season with sea salt and pepper.
3. Saute for 1-2 minutes per side. Do not overcook them (they should still be pink on the inside).
You can also try adding in some sautéed onions for extra flavor!
