Breakfast Sausage

Over our two and a half years on GAPS, we have tried many different recipes for breakfast sausage and patties. One time early on in the diet, I made up a mega batch of sausage patties so that I could freeze them up and use them as needed, only to find out that none of us really liked the recipe.

This recipe for breakfast sausage is a more recent addition to our diet, and we all love it. But just to be safe, make sure you only make one batch of them before you decide to make up a bunch to freeze … just in case 😉

 

Breakfast Sausage

1 lb. ground beef (preferably organic, grassfed)

1 lb. ground pork (preferably organic)

4 Tbs. fresh sage (or 4 tsp. dried sage)

1 Tbs. fresh thyme (or 1 tsp. dried thyme)

½ Tbs. fresh marjoram (or ½ tsp. dried marjoram)

¼ tsp. allspice

2 tsp. sea salt

1 tsp. fresh pepper (or less, to taste)

 

Combine all ingredients and knead together. Form meat into patties and fry in ghee or lard (or another animal fat), turning once to brown both sides evenly. Makes about 12-15 patties.
