This recipe is acceptable on the GAPS Introduction Diet stage one. It is also something that I can get my boys to eat even when they don’t have much appetite in the beginning 🙂
Meatball Soup
1-2 quarts of meat stock (I like chicken)
2 onions, diced
2 shallots, diced
several cloves of garlic, diced
chives, chopped (add in stage two)
1 lb. organic grass-fed ground beef, made into 1 inch sized meatballs
sea salt to taste
1. Bring your meat stock to a boil and then add your vegetables. As they are simmering, form your meatballs and drop them into the broth. Simmer for about 20-30 minutes until meatballs are cooked through and vegetables are soft.
Once this soup is warm (not boiling hot), you can also add sour cream to it to make it creamier. Different vegetables can be added to this soup per your family’s taste. The boys don’t care what’s in it, they just like the meatballs. 🙂 The onions in the soup give the meatballs a nice flavor; plus, onions are very healing to the digestive and immune systems.
