The weather this winter has been so dark and gloomy that I find myself craving warm and comforting drinks. Besides diffusing uplifting (and germ killing) essential oils, I’ve been drinking 2 to 3 (or more) mugs of something warm and yummy, whether it’s green tea (mostly), hot chocolate, or this wonderful pumpkin nog. Just because you’re eating healthy or following the GAPS Diet doesn’t mean that taste doesn’t matter anymore! All of the recipes that I’ll be posting in the next day or two for warm drinks are both healthy and delicious.

Hot Pumpkin Nog
2 organic pastured eggs
2 Tbs. butter or ghee
2 Tbs. organic virgin coconut oil
2 Tbs. raw honey
1/4 tsp. sea salt
1/2 tsp. vanilla extract
1 tsp. pumpkin spice (or 1 drop cinnamon, 1 drop clove essential oils)
1/2 cup pumpkin
2 cups hot filtered water
cinnamon, to sprinkle on top
Place all ingredients in your blender and blend until smooth. Pour into mugs, sprinkle cinnamon on top and enjoy!
This cup of pumpkin nog was served in my favorite coffee cup … I was my mom’s when I was growing up and brings back memories of her in the kitchen 🙂
