Even though “breakfast” is in its name, this dish is delicious for any meal or even a snack. You can vary the ingredients in it to suit your preferences.
Beef, Kale and Mushroom Breakfast Bake
1 onion, diced
1 lb. organic grassfed ground beef
ghee or animal fat
2-3 cups chopped kale (or spinach)
1 red or green bell pepper, diced
1/4 cup chopped scallions
1 cup baby bella mushrooms, sliced
7 organic pastured eggs
1 tsp. garlic powder
1/2 tsp. red pepper flakes
sea salt/pepper
1. Preheat oven to 350 degrees Fahrenheit and grease a large casserole dish.
2. In a large frying pan, brown beef in ghee; add onion when almost cooked. Remove from heat.
3. Add kale, bell pepper, scallions and mushrooms to frying pan in ghee and saute for a few minutes.
4. Mix all the ingredients together and bake in casserole dish for 45 minutes.
