Here’s another great, healthy recipe that can easily be poured into popsicle molds and enjoyed frozen. You could also make so many different varieties of this same recipe by omitting the cocoa powder or by switching up the essential oils or flavoring used in the recipe.
The original recipe is found on the amazing website of Mommypotamus. It’s a keeper!
Chocolate Peppermint Superfood Smoothie
½ ripe avocado
1 ripe banana (preferably frozen)
½ cup coconut milk (can use homemade coconut milk yogurt for extra probiotics)
1-2 Tbs. raw honey
2 Tbs. cocoa powder or cacao
1 tsp. vanilla extract
¼-1/2 tsp. peppermint ext. (or use 1-2 drops peppermint essential oil – ask me for my essential oil recommendations, as not all oils are of equal quality)
1 ½ tsp. gelatin (I use Great Plains gelatin – the one in the red can)
1-2 Tbs. melted coconut oil/butter (add slowly while blending when all other ingredients already blended)
2-4 pastured, organic egg yolks, from a source you trust (opt)
½ cup ice
2 Tbs. almond butter (opt)
Add all ingredients to your blender and blend until smooth (add the coconut oil last and slowly drizzle in while blending; if you forget this step and just add everything at the same time, it also turns out well). Serve immediately or pour into popsicle molds to enjoy later.
