Maybe I’ve spent too much time out in the 105 degree + Texan heat the last few days, but I am totally thinking cool summer recipes right now! Watch out, because I spent some extra time in the airport this weekend and had my laptop handy, so I have a bunch of new recipes to post here on my website 😉
Summer doesn’t have to mean sugary, food dye-colored, chemical-filled treats for your kids. Making healthy, delicious (and even probiotic-filled!) treats for the kids can literally take less than 5 minutes of prep time on your part. Simply put the ingredients in a blender, turn it on, blend until smooth, and pour into popsicle molds. Yum! (The hardest part is waiting for them to freeze, although Mom uses manages to help herself to the last drops remaining in the blender container 😉 )
Here’s an example of a delicious popsicle recipe. Other recipes on my website that you could pour into popsicle molds are: Mango Berry Popsicles, Strawberry Ice Cream, and Peach Ice Cream (with more recipes coming soon!). I also tend to pour whatever is left from our morning or afternoon smoothies into popsicle molds to use as an icy treat for later. Be creative!
Orange Creamsicles
1 c. freshly squeezed orange juice
1 c. full fat coconut milk (you can also use homemade coconut milk yogurt for an extra probiotic boost)
3 Tbs. raw honey
½ tsp. vanilla extract
3 drops orange essential oil (ask me what essential oils I recommend)
Blend. Pour into popsicle molds. Freeze. Enjoy. It’s that easy.
